When someone asks me about my fine dining recommendations in Paris, lunch at L’Arpège is always on the top of my list. Alain Passard is the pioneer of ditching proteins and putting humble, sometimes forgotten vegetables in the center of the plate. What many forget, that before reinventing himself as a master of vegetables, Alain Passard was a master of roasting. So if you take the tasting lunch menu you will not only have a chance to taste an array of Passard’s classical or new vegetable dishes, but also the “roast of the day”, which can be anything from perfect sole fish, chicken or this 7 hour roasted pork with crispy skin pictured above. L’Arpège lunch menu comes at 145 euros, quite a bargain considering that its dinner tasting menu costs 380 euros or, that some 3 Michelin stars restaurants in Paris charge this amount for just one dish!
